Indian Arrival Day in Trinidad was just a few weeks ago, so I thought why not pull as much inspiration as I could from my Indian heritage and give cooking the signature dish of Indian households everywhere, particularly, West Indian households a try.
Curried Chicken (if you're from Trinidad and Tobago) or Chicken Curry if you're from some other Caribbean islands is a well known dish, featuring spices from the motherland, but an ethnic flair that only sweet sweet Trinidad could offer. Food is the glue of the carribean, the one thing that binds all our diverse cultures together, and around this time of year, this dish takes center stage.
Every family seems to have their take on the idea, however, this was my personal interpretation and style of the dish, seen in the video below. I mostly eye-balled my measurements from experience, and you can follow along using my method, but if you're looking for something more suited to beginners, feel free to check out this recipe.
